UMAMI

First we had "You daddy!"   Now we have Umami.   What a fight we had over that one.

For centuries, it was accepted that humans had four taste receptors on their tongues:  sweetness, sourness, saltiness, and bitterness.  That was it . . . no more.

In the early 1900's, a Japanese scientist proposed that there was a fifth taste - umami.  It was not accepted as a distinct taste by Western scientists until 1985.  The description for the taste of umami is savory.  It is the taste of glutamate (that's the 'G' in MSG).  Some people describe it as a "meaty" taste that coats the tongue with pleasant aftertaste.  Umami is contained in breast milk, fish, ketchup, cured meats and mushrooms.
