I MAY HAVE BUTCHERED THIS

When beef cattle is butchered, it is cut into eight large sections called the primal cuts.  From front to back along the top of the animal are the chuck, rib, loin and round cuts.  Along the bottom, you have the shank, brisket, short plate and flank. 

Hamburger or what is just called ground beef is taken from multiple cuts.  Ground chuck and ground round have meat taken from only those primary cuts - the chuck and the round cuts.  

Most of your restaurant steaks come from the loin cut.  Exceptions are the rib eye which comes from the rib cut, skirt steaks come from the short plate and flank steaks come from the flank. 

Interesting to note that the cuts mentioned above are American standards.  In other countries, the animal may be butchered differently.  

Oh yes, beef tongue is really the tongue.  And quite good, I'm told. 

Rocky Mountain Oysters have their origins in beef cattle.  They do not come from the Rocky Mountains, are not really oysters and are not from any part of the eight primal cuts of beef cattle.  The same people who eat the beef tongue usually like the Rocky Mountain Oysters.  No thanks!
