PRESENTATION
Presentation is so important. If you go to a really nice restaurant, you notice immediately how good the food looks when its placed on the table. Neat! Colorful! Appetizing! Its all part of the fine dining experience.
My wife and I were in Puerto Rico a number of years ago on a business/pleasure trip. We stayed in the city of Ponce on the southern coast. One day for lunch we ventured from the Hilton to a little restaurant in the city. Fish is rightly the island's number one entree. We were with a group including an interpreter. My wife was just about convinced to order the red fish when someone at the table next to us was delivered the same dish. She almost screamed. It was a whole fish. Fins! Tail! Eye! Mouth! Gill! It might have tasted great but there was no way she was going to eat that creature. Pollo for her...and it came without feathers.
