Last week, Irish beer.  This week, Irish Whiskey.

What makes whiskey Irish?  Well, it has to be distilled in Ireland.  Isn't that enough?  There are a few other requirements but none of consequence. 

There was a time when Irish whiskey was thought the best in the world - that would be the middle to late 19th century.  The country went from thirty (30) distilleries in the late 1800s to just three (3) in the late 1900s.  In the last 25 years, there has been a resurgence of popularity in the Irish product. 

Much of the Irish problem had to do with their style.  Blended whiskey and it's smoother taste was taking over the market and no Irish distillers adapted to the trend.  Now they have about twenty distilleries and 10 more planned.  Many of these are owned by larger firms trying to capitalize on the Irish Whiskey resurgence. 

 Jameson, a product of Irish Distillers in Dublin, is a great blended whiskey - one of my personal favorites.  Old Bushmills is produced in Northern Ireland and has been around forever.  If you think most expensive is best, try Redbreast, Single Pot Still, 21 year Irish Whiskey at $299 a bottle.
